Chocolate Squares (No Bake)

Ingredients A : 250g marie/ digestive biscuit, 50g almond flakes (optional-toasted), 250g cooking chocolate, 125g butter

Ingredients B : 100g cooking chocolate, 20g almond nibs (optional-toasted)

Method :
1. Crush Marie/ Digestive biscuit in a mixing bowl. Add in almond flakes and mix well.

2. Double-boil cooking chocolate until melted. Add in butter and mix well. Pour into mixture (1) and mix into a dough. Place the dough into 7"X7" square lose bake cake tin( lined with baking sheet) and press until firm.

3. Double-boil cooking chocolate in ingredients (B) until melted and pour on top of the (step 2). Sprinkle almond nibs on top. Chill in the fridge for 2 hours. Remove, cut into squares and serve.


Cinnamon Apple Muffin

肉桂苹果小蛋糕


Filling : 1tbsp butter, 2 apples(chopped ), 1-2 tsp cinnamon powder, 2tbsp water, 2tbsp caster sugar

(muffin)Ingredients : 500g Plain muffin mix, 175g Eggs, 110ml water, 140g melted butter

Method :
1. Filling : Melt butter, stir-fry apples and cinnamon powder until aromatic. Add in the remaining filling ingredients, stir-fry at low heat until dry. Dish up and leave to cool

2. Mix all (muffin) ingredients except melted butter at low speed for 1-2 minutes, then change to medium speed and continue mixing for another 4 minutes, fold in melted butter and mix well at low speed for 1 minute.

3. Spoon 1tbsp batter into muffin cup. Add in some apple filling and cover with batter till 3/4 full. Bake at 180 degree for 25-30minutes (golden brown)
